Ingredients 2-4 servings:
- 300g Oyster mushrooms from Ferg’s
- 100g flour
- 50g cornstarch
- 1 tsp smoked paprika
- 1 tsp salt
- 2 tsp Ferg's Umami Seasoning (garlic, onion, sea salt, jalapenos, mushrooms) finely ground into powder
- 1 tsp finely ground black pepper
- Avocado oil
- Neutral frying oil or tollow/lard
Steps:
- Take your mushrooms and place them in a bowl and coat with avocado oil. You
want all mushrooms to have a light coating so the flour mix will stick but no
excess.
- Take a separate bowl and mix all the dry ingredients into it. Take the mushrooms and toss through the dry ingredients.
- Let the mushrooms rest for 5 minutes to allow the dry ingredients to slightly
hydrate which will help get the mushrooms extra crispy. - Heat your oil in a pot to 355°F. Once heated fry the mushrooms for ~4 minutes or
until golden brown and crunchy. - Toss in a bowl with some extra salt and serve with a wedge of lemon or your
favorite dipping sauce.
