The magic here starts with Ferg's Dried Mushroom Blend! Our signature dehydrated blend that rehydrates beautifully in the pan, soaking up butter and garlic until it's deeply golden and absolutely irresistible. Pair that with a silky cream sauce spiked with dry white wine, a pop of Dijon mustard, and Ferg's own Umami Seasoning, and you've got something truly special on your hands.
We love this recipe because it hits that sweet spot between comfort food and something that feels genuinely elevated. The lemon juice brightens everything up, the parmesan brings a salty richness, and the fresh parsley at the end? Don't skip it, it makes the whole dish sing.
We're going fettuccine on this one (those wide, flat noodles were made to hold a sauce like this), but honestly, use whatever pasta you love. Rigatoni, pappardelle, even a good linguine, it's all going to be delicious.
Whether you're cooking for yourself on a Tuesday night or trying to impress someone special, this dish delivers every single time.
Let's get cooking!
Ingredient list:
- 8 oz pasta of choice (we like fettuccine for this one!)
- 8 oz Fergs dried mushroom blend
- 2 tbl unsalted butter
- 3 cloves garlic minced
- 1 lemon
- 1/3 cup dry white wine (can substitute chicken stock)
- 1 cup heavy cream
- 2 tbl lemon juice
- 2 tsp Dijon mustard
- 1 tbl flour
- 1 tbl Ferg’s Umami seasoning
- 1 tbl Italian Seasoning
- 2 tbl freshly chopped parsley
- 1/2 cup freshly grated parmesan
Step 1. Cook pasta to al dente (salt your pasta water!) Set aside
Step 2. Add tbl butter and 1 tbl olive oil to skillet on medium high heat. Saute mushrooms and garlic until golden brown and moistures cooked out. Remove mushrooms and set aside.
Step 3. Add seasonings, lemon juice, white wine and Dijon mustard, stir to incorporate. Slowly stir in flour until it's thoroughly mixed.
Step 4. Add heavy cream and simmer for 3-5 minutes while consistently stirring until it starts to thicken.
Step 5. Add mushrooms, parsley and parmesan and continue to simmer for a few minutes until thickened to desired consistency.
Step 6. Toss pasta in sauce, serve with grated parmesan, lemon zest and fresh parsley. Enjoy!
